Butler House Pancake Tuesday Recipe

Pancake Tuesday is just around the corner and our Head Chef Amy Ryan has shared her favourite pancake recipe, along with some delicious topping suggestions! 

 

Pancake Recipe:

 

Ingredients

  • 1 ½ Cups all-purpose flour
  • 3 tablespoons of icing sugar
  • 1 ½ teaspoons baking powder
  • 1 large egg, 2 egg white
  • 1 1/3 cups of milk
  • 2 tablespoons of melted butter
  • 2 teaspoons vanilla

 

Method

Whisk together the flour, sugar, salt and baking powder in a medium bowl and set aside.

In a separate bowl, whisk the egg yolk, milk, vanilla and melted butter together to combine. Add the flour mixture into the wet mixture and stir only until combined. It is fine to still have some lumps.

Allow the batter to rest for at least 10/15 minutes, the longer the better!

While the batter is resting, use a mixer to beat the egg whites on medium to high until stiff peaks form. This will take about 3 minutes if using an electric mixer and about 7 minutes if doing it by hand 

Fold the beaten egg whites to the batter just before you are ready to pour the batter on the pan.

Grease a non-stick pan heated to medium with spray oil or butter. Pour the batter onto the pan, one full ladle. Allow to heat until bubbles begin to form throughout the pancake and then flip. Cook for several more minutes or until cooked to desired golden brown.

Serve warm with which ever toppings you like.
